Egg Free Red Velvet Cupcakes

I've purposely been posting non-dessert, non-sugary recipes the past few weeks as a visual detox from the holiday sugar rush.  But now we are gearing up again for Valentines Day in a few weeks.  It never really ends does it.  This is my hub's favorite, most requested cupcake.  I've gone through alot of red food coloring over the past few years.  I've tried a few different recipes, but I like this version the best.

Egg Free Red Velvet Cupcakes
From Egg Free Bakery, adapted from Vegan Cupcakes Take Over The World & Art of Dessert

1 cup buttermilk or 1 cup milk mixed with 1 tsp apple cider vinegar
1 -1/4 cup flour
1 cup sugar
2 Tbsp cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup canola oil or melted butter
1 Tbs red food coloring
1 tsp vanilla extract

Cream Cheese Frosting
4 oz. cream cheese, room temperature
1/4 cup butter,  room temperature
1/2 tsp. vanilla extract
1-1/2 cups powdered sugar

Preheat oven to 350°F and line a muffin tin.  If using milk/vinegar, combine and let stand 5 minutes before using.  In a large bowl mix together flour, sugar, cocoa, baking powder, baking soda and salt.  In a separate bowl, combine oil, food coloring, vanilla extract and buttermilk (or milk/vinegar mixture).  Mix well.  Add wet ingredients to the dry ingredients and mix just until large lumps are gone.  Using a 1/4 cup measuring cup, divide batter among lined muffin tins.  Bake in preheated oven 18-20 minutes or until toothpick inserted in center comes out clean.  Remove and let cool in pan another 5-10 minutes before removing to wire rack to cool completely. Yields 12 cupcakes

To make the frosting:
With a stand or hand held mixer on a low speed, beat the cream cheese, butter and vanilla extract until blended. Slowly add the powdered sugar, a cup at a time. Once all the powdered sugar is added, increase to a higher speed to whip the frosting till light and fluffy. Use a large round piping tip to pipe the frosting onto each cooled cupcake.
