Cheesy Shredded Chicken Bites

I think I've made these a dozen times within the past month.  I think they are meant to be served as an appetizer, but I make the chicken mixture and me and my hubs eat it for lunch.  I eat it with crackers, he likes to put it on a sandwich.  It comes together quickly and I usually have all the ingredients on hand.  Can be served warm or cold, but I prefer it warmed up.


The recipe can be found here at Dine & Dish.  The only changes I made is I always rinse my chicken.  I feel like it helps get rid of the "canned taste".  I cut down on the seasonings by about half.  I felt it was just borderline too spicy for me and I preferred it with rice crackers rather than butter crackers.
