Vanilla Spice Oatmeal

Because I like to offer my kids variety and help them get a good start to the day with a filling breakfast and because I like lists and schedules.I have a weekly breakfast menu rotation.  :)  It goes something like this:

Monday- Oatmeal
Tuesday- Cereal (my kids' fave-- but I try to buy things like Frosted Mini Wheat, Rice Chex... you know, stuff that's a little less sugary)
Wednesday- Heart Healthy Pancakes or Whole Wheat Waffles (watch for these recipes in the coming months)
Thursday- Cream of Wheat
Friday- choice of cereal of leftover pancakes/waffles from freezer
Saturday- French Toast, crepes-- usually something a little more fancy because this is the one day a week that we eat breakfast together as a family.
Sunday- Cereal

This is another everyday go-to oatmeal recipe that I have.  Perfect on chilly fall and winter mornings with a mug of hot cocoa. 

 

Vanilla Spice Oatmeal
From Egg Free Bakery, adapted from Ellie Krieger

1/2 cup old fashioned oats
1 cup water (You can also cook the oats in half water/ half milk for a creamier texture)
2 Tbsp raisins
dash of nutmeg
1/8 tsp cinnamon
1/4 tsp vanilla
1 tbsp brown sugar, dark or light
Milk, for serving
Additional raisins & cinnamon for garnish, optional

In a microwave safe bowl, combine oats, water, raisins, nutmeg and cinnamon. Microwave on high 2-3 minutes.  Let stand a few minutes until desired consistency is reach.  Stir in vanilla.  Swirl in brown sugar. Add a splash of milk. Garnish with a sprinkle of cinnamon and extra raisins, if desired.  Serves 1
