Tip: Spreading Seasonings on Roasted Birds

Here's a little kitchen tip a friend gave to me once:  When a recipe for roasted chicken or turkey directs spreading seasonings between the skin and the meat- use a spoon to help get those hard to reach places.  Like so:


I've even gotten the seasonings down by the dark meat too using this method.  It's also great because you don't have to touch it as much. (it= your bird.  I don't typically get squeamish preparing whole bird, but there was one time when it was really grossing me out... Even just looking at this picture is grossing me out.)
