Nut Free No-Bake Cookies

Lately I've kind of been making and eating whatever sounds good and making things that are more quick and easy. I happened to be craving these.  

These yummy little cookies are simple and quick to make- a good recipe for little helpers in the kitchen.  A lot of times no-bake cookies have peanut butter in them, but this recipe has no nuts (and kind of tastes like a mounds candy bar, but don't tell the hubs or he probably won't like them anymore...shh) 

This recipe is naturally gluten/wheat free too, if that is an issue for you.


Nut Free No-Bake Cookies

2 cups sugar
1/2 cup milk
1/2 cup butter or margarine
3 tbsp unsweetened cocoa powder
1 tsp salt

3 cups quick, uncooked rolled oats
1 tsp vanilla
1 cup shredded coconut

In a large saucepan, combine sugar, milk, butter or margarine, cocoa and salt.  Stir over medium heat until mixture comes to a boil.  Boil 1 minute.  Remove from heat. Blend in oats, vanilla and coconut.  Drop by tablespoonfuls on baking sheets lined with waxed paper or parchment paper.  Refrigerate for 1 hours or until firm.  Yield about 2 dozen cookies
