Bacon Apple Cheddar Grilled Cheese

I know right?  It sounds totally weird.  I saw the recipe for this over at Our Best Bites, and they don't usually let me down.  They said it was good, so we tried it.  I was really surprised!  And even more surprised when my kids gobbled it down without complaint!  These have made and will continue to be making a frequent appearance at our house. The original recipe did not call for bacon, but since I live with a carnivore (aka my hubs) we added bacon. {Not pictured, however.} You can't ever go wrong adding bacon to something.  :)  Makes a great semi-sweet-savory breakfast or breakfast for dinner or lunch... pretty much good for anytime.  It's also really simple that the kiddos can help in the kitchen making these too.


Bacon Apple Cheddar Grilled Cheese
From Our Best Bites, slight variation by Egg Free Bakery

Per Sandwich you will need:
2 slices of good quality bread
1 slice of cheddar cheese (or enough to cover one side of the bread)
2 thin slices of apple
ground cinnamon
kosher salt
1-2 strips of bacon, cooked
Maple Syrup  (the real deal or this delicious homemade recipe)

Rinse and dry apple.  Slice into thin slices.  Lay out your bread.  Cover one piece of bread with the cheddar cheese slices.  Next, cover the cheese with the apple slices.  Sprinkle ground cinnamon and a sprinkle of kosher salt over the apple slices.  If your bacon is not cooked, place it on a paper towel lined plate.  Top with another paper towel and cook on high a minute or two until crisp.  Place bacon strip(s) on top of apple layer.  Top with the remaining slice of bread.  Butter both sides of bread.  Heat a skillet over medium heat.  Grill sandwich until golden, flip and continue cooking until the other side is golden brown.  Remove from heat and let stand a minute or two.  Drizzle with maple syrup (just a little here, don't drench it!) and serve.  Repeat to make as many sandwiches as you want.
