Egg Free Blueberry Cobbler

Where has the summer gone?  (Where has the year gone?)  I think I've mentioned already how I love summer time because of BERRIES!  There have been some killer deals on blueberries this year where I live.  This is a yummy recipe from our best bites for berry cobbler (just don't pay attention to the butter or cream or sugar... It's got blueberries in it- healthy.  And flour (grain)- healthy.  :) adapted egg free!

1-1/2 cup flour
1/2 cup plus 2 tbsp. sugar
1-1/2 tbsp. baking powder
1/8 tsp. salt
zest of one small lemon
1/4 cup cold butter
3/4 cup cream
2 cups blueberries (you can use a blend of berries too)
1/4 cup brown sugar 

Streusel Topping:
1/4 cup sugar
2-1/2 Tbsp flour
1/2 tsp. cinnamon
2 tbsp. butter, room temperature

Preheat oven to 350 degrees.  In a bowl combine flour, sugar, baking powder, salt and lemon zest with a wire whisk.  Grate cold butter and toss with flour mixture until small crumbs form.  Add cream and mix just until mixture is combined.  Grease an 8 x 8 inch pan.  Press about 2/3 of the dough into the bottom of greased pan.  You may want to slightly wet your fingers with water to help it all come together.  In another small bowl, toss the blueberries and the brown sugar.  Put blueberries on top of dough in pan.  Drop remaining dough in small chunks on top of blueberries.  In another small bowl, combine sugar, flour and cinnamon for streusel topping.  Cut in butter.  Sprinkle streusel topping on top.  Bake 35-40 minutes until cooked through and golden brown on top.  Let cool 10-15 minutes after removing from the oven.  Serve with ice cream or whipped topping.  Yield 6 servings
