Egg Free Banana Cake With Chocolate Frosting

My mom used to make banana cake with chocolate frosting from time to time when I was growing up and I think it was a nostalgic thing for her.  The other day I was feeling nostalgic, and usually when that happens I binge on homemade macaroni and cheese or rice pudding, but I was really feeling in the mood for banana cake.  So here it is:  Enjoy!


Egg Free Banana Cake with Chocolate Frosting
From Egg Free Bakery (Chocolate Frosting from Hershey's) 

1/2 cup very ripe banana, mashed
1-1/4 cup flour
1/4 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt
3/4 cup sugar
1/3 cup oil
2/3 cup buttermilk
1 tsp vanilla extract

Preheat oven to 350 degrees.  Mash banana in a bowl until it is very smooth.  Add oil, buttermilk and vanilla and mix until well combined.  In another bowl, sift together flour, soda, powder, salt and sugar in a large bowl.  Create a well in the dry ingredients and fold in wet ingredients, mixing to just combine.  Don’t overmix.  Spray an 8x8 inch baking pan with cooking spray and pour cake batter into prepared pan, spreading so it is even.  Bake in preheated oven 22-27 minutes or until toothpick inserted in the center comes out clean.  Remove from oven and allow to cool completely before frosting. 

Hershey's  "Perfectly Chocolate" Chocolate Frosting
1/4 cup butter 
1/3 cup cocoa powder 
1-1/2 cups powdered sugar 
3 Tbsp milk
1/2 tsp vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. Yields 1 cup frosting.
Spread frosting onto cooled cake.  I like to refrigerate for an hour or so before serving to help the frosting firm up.  Cut into squares and serve.  Cake yields 9-12 servings

  1. My 5 year old, who is anaphylactic to eggs, recently requested banana cake. I stumbled across this recipe and gave it a try...it was SO good! Thank you for posting this. It made my egg free little guy super happy :)
