Bacon-Onion & Cheddar Sliders

I think I've mentioned earlier this month that I'm ready for grilling season-- and we would totally be grilling by now if it weren't for the rain... even that doesn't stop us sometimes. :) These delicious sliders are cooked indoors on a skillet, but I'm sure you could cook the meat on a outdoor grill as well.


Bacon-Onion & Cheddar Sliders
From Egg Free Bakery, adapted from The Little Kitchen

1 lb ground beef
Salt & Pepper
1-2 tsp oil
1/2 onion, sliced
1-2 tsp brown sugar
5 strips of bacon, cooked until crisp
10 slices cheddar cheese
10 small Hamburger slider buns or rolls

Heat a large skillet over medium heat.  Add oil and swirl pan to coat.  Add sliced onion and saute about 5 minutes.  During last few minutes, add brown sugar cooking and stirring constantly until onions are softened, browned and caramelized.  Remove onions to a plate and cover to keep warm.  Divide beef into 10 pieces, form and flatten into patties.  Sprinkle with salt and pepper.  Add to skillet and cook about 4-5 minutes per side until cooked through.  Split hamburger buns and toast, if desired.  Cut bacon into fourths.  Put two pieces of bacon onto the bottom of each hamburger bun.  Top with cooked hamburger patties, slices of cheese and cooked onions.  You may also add desired condiments, such as ketchup or BBQ sauce.  Replace hamburger bun top.  Serve immediately.  Yield 10 sliders
