Egg Free Chocolate Waffles

Yes.  Chocolate Waffles.  Because everything should come in a chocolate flavor. :) My hubs (who is the "savory-breakfast-guy") gave his stamp of approval on these- and even had one more-- which he NEVER does.  Ever. When I make waffles or pancakes for breakfast.  The kids, of course, gobbled them right up.  Serve these with a strawberry or raspberry sauce/syrup for a Valentine's Day Breakfast!

Egg Free Chocolate Waffles

1-3/4 cups flour
1/4 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
¾ tsp salt
1/4 cup applesauce
1/3 cup vegetable oil
1 cup buttermilk or 1 cup milk + 1 tbsp vinegar
1/3 cup sour cream or plain yogurt

In a bowl mix together dry ingredients and set aside.  In another bowl, combine applesauce, oil, buttermilk and sour cream.  Add the wet ingredients to the dry and mix to combine.  Don't overmix.  The batter will be very thick, but it needs to be thick so it doesn't stick in your waffle iron.  If you find it is too thick, thin with a little water.  Lightly coat waffle iron with cooking spray.  Pour about 1/2 cup batter onto preheated waffle iron and bake until crisp, spraying griddle with cooking spray in between batches.  Top with desired toppings such as fresh fruit (bananas, strawberries), fruit sauces/syrups, and/or sweetened whipped cream.  

Pictured above I served my waffles with strawberry sauce and sweetened whipped cream and a pinch of additional cocoa powder to garnish.  Yields about 4 servings.
