Basic Sweet Potato Fries

I like sweet potatoes.  I do!  I like them Sam-I-Am.  Whenever I serve sandwiches of some sort for dinner, my go-to side dishes always seem to be some sort of "fry": potato wedges, zucchini fries, and sweet potatoes fries.  This recipe is just a basic salt and pepper recipe, but other seasonings can be added as well if desired.  These are wonderful served anytime of year, but using an orange fleshed sweet potato, you can make Halloween colored sweet potato fries!



Basic Sweet Potato Fries
From Egg Free Bakery

2 sweet potatoes, try to choose ones that are not too twisted and weird looking so you can cut them into equal/even strips
olive oil
Kosher salt
Fresh Cracked Pepper

Preheat oven to 400 degrees.  Peel and cut sweet potatoes into strips about 1/2 inch thick.  Drizzle olive oil over potatoes and use your hands to mix so that potatoes are evenly coated.  Layer potato strips in a single layer on a cookie sheet.  Sprinkle with salt and pepper.  Bake 15-20 minutes, remove from oven and flip each strip over.  Return to oven and continue baking another 15-20 minutes until fries are nicely browned.  Season with more salt and pepper if needed and serve immediately.  These are tasty with a ranch dip too.  Yield: 2-3 servings
