Bacon & Broccoli Stuffed Grilled Cheese Sandwiches

That's a mouthful isn't it?  "Bacon & Broccoli Stuffed Grilled Cheese Sandwiches" :)  But trust me, just one mouthful of this sandwich is not enough!  (Maybe it's just me. I was hungry.  Why is it food always tastes a thousand times better when you are starving?)  I thoroughly enjoyed every bite of this sandwich.  I would have to say using french bread is a must!  I think that's what made the sandwich, but in a pinch I guess you could use another high quality sandwich bread.

Bacon & Broccoli Stuffed Grilled Cheese Sandwiches

4 slices french bread
1-2 bacon strips, cooked and crumbled*
3-4 broccoli stems/florets, cut into bite sized pieces
1/2 garlic clove, minced or 1/4 tsp bottled minced garlic
1 green onion, chopped
4 slices cheddar cheese
BUTTER

Heat a skillet over medium high heat.  Add a couple teaspoons of butter and let melt and bubble.  Add in chopped broccoli and stir to coat broccoli pieces with butter.  Reduce heat to medium and let cook for a few minutes, stirring frequently.  Add chopped green onion and garlic.  Cook for another 30 seconds or so.  Add bacon and continue cooking another 30-40 seconds.  Top each slice of french bread with a piece of cheddar cheese.  Spoon broccoli-bacon mixture onto 2 of the french bread slices and then top with other half.  (So you have bread, cheese, broccoli-bacon mixture, another piece of cheese, bread.)  In the same skillet that you used to cook the broccoli, add a little butter, let melt and bubble and then immediately place sandwich on skillet to grill.  When underside is golden, butter skillet again and then flip to grill the other side.  Remove when golden and repeat with remaining sandwich.  Let sandwiches stand a minute before slicing and diving in.  Yield 2 sandwiches-- they are small, I ate both of mine- so I'll let you decide whether it constitutes "one" or "two" servings. :)

*Make ahead tip:  My bacon was already cooked and crumbled and ready to go making this even easier to throw together.  But, if you haven't planned that far in advance, you can also microwave the 2 strips of bacon on a plate between paper towels.
