Egg Free French Toast!

French Toast!  I was excited when I found recipes for French Toast.  It has always been one of my favorite breakfast foods.  I've found when making french toast, whether it is egg free or not, it always tastes better and is less likely to fall apart if you use high quality bread.  I use my homemade bread.  I'm sure you could make this dairy free too using your favorite milk and margarine substitutes.


Egg-Free French Toast

8 slices high quality bread
1 cup milk
2 Tbsp cornstarch
2 tsp brown sugar or maple syrup
1 tsp vanilla extract
2 tsp butter or margarine
Dash salt
1/8 tsp ground cinnamon, optional

Preheat a griddle or fry pan to medium heat. In a medium bowl, combine all ingredients except bread and butter. Mix until the cornstarch is dissolved. Transfer mixture to a shallow bowl or pan. Rub butter on the griddle or skillet to grease. Quickly dip both sides of each bread slice into the mixture- you don't want to soak the bread, otherwise it will fall apart. Immediately place bread on heated surface and cook 1-2 minutes or until golden brown.  Flip, (you kind of have to work your spatula around under it.  It might seem at first like it is stuck to the pan, just loosen it a little and it will flip over just fine) cook an additional 1-2 minutes or until brown.  Continue with remaining bread, buttering skillet between batches.  Top with desired toppings and serve immediately. Yield 4 servings.

For fun- slice them into strips to make french toast sticks and serve with a small cup of maple syrup for dipping.  My kids just like powdered sugar or "snow" on theirs.
