Banana Bread Oatmeal

This has become another one of my favorite oatmeal recipes! I've tried several recipes for banana oatmeal/ banana bread oatmeal and this one knocked my socks off!  It's so good!  I'm sure  pecans on this would be delightful, but >sigh<, we are nut free in our house.  Anyway, I hope you enjoy it too. (p.s. my kiddos actually ate this oatmeal and they are not fans of oatmeal! ... yet.)


Banana Bread Oatmeal

1 cup milk
1/2 cup water
1 cup Old Fashioned oats
1/2 cup low-fat buttermilk
1 overripe banana. mashed
1 tbsp brown sugar
1/4 tsp cinnamon
1/8 tsp salt
1/4 tsp vanilla
banana slices for garnish, optional


In a medium sauce pan, combine water and milk and bring to just a boil.  Reduce heat to medium low and stir in oats, buttermilk, mashed banana, brown sugar, cinnamon and salt.  Cook 5 minutes, stirring occasionally.  Remove oatmeal from heat, stir in vanilla.  Cover with a lid and let rest 3 minutes.  Portion into individual serving bowls, garnish with banana slices.  Serve warm. Yields 2.

For microwave:  In a very large microwave safe bowl, combine oats, milk, buttermilk, water, mashed banana, brown sugar, cinnamon and salt.  Microwave on high for 3 minutes.  Allow to rest in the microwave for a couple of minutes.  Remove from microwave and stir in vanilla. Top with banana slices, if desired and serve.
